Our decaffeinated coffee is crafted using the Mountain Water Process (MWP)—a natural, chemical-free method that preserves the integrity and rich flavour of each bean. All our MWP decafs come from Descamex, a renowned decaffeination facility located in Mexico. This method uses pure glacier water sourced from Pico de Orizaba, the country’s highest mountain, ensuring both purity and sustainability.

The process begins with determining the optimal conditions for decaffeination. The green coffee beans are then gently steamed and hydrated, preparing them for caffeine extraction. Through a water-based saturated solution, the caffeine is carefully removed while the bean's essential flavour compounds remain intact—resulting in a cup that’s full of character, but free of caffeine.

Sourcing

We source this particular coffee from Sucafina, who offer a whole farm policy for their coffee's, allowing a more sustainable and ethical relationship between roasters and farmers. We purchase this particular coffee year round.
